Welcome to Nutrition Online. This course is completely online. I am providing you with a virtual orientation that shows you how the class is designed and some important information about our two Learning Management Platforms. (Please keep in mind that these videos are from previous semesters so there will be some subtle changes, but the navigation and overall class design is represented.) The 4-week course is intensive, covering the same content as the full-term course. A tentative schedule follows. If you do not have time to devote to class, and are planning to squeak it in during some spare moments, please reconsider taking this course in the fall. Trust me. Textbook
I use an interactive book, available at a price that is less than my previous book. If you are interested in owning JUST the electronic version (~$90), I will provide that code to you in email the week prior to class, on Canvas and on the syllabus. The code is specific to your particular section so I can not just provide you with an ISBN. If you wish to purchase the softbound book, in edition to the e-version, you can either do that through the link that I supply or in the bookstore. The price for that varies, based on whether you purchase in the book store on via the link. You will also have an opportunity to purchase the softbound book at the McGraw Hill website (the link that I provide) and that will be less expensive than the bookstore. Keep in mind, that purchases from the bookstore have a mark-up so the least expensive option is going to be purchasing through the link that I provide. Also, I do see that you can rent the book on Chegg WITH the Connect Access Code but the option I provide is less money. This code is required for the course.
Perspectives in Nutrition: A Functional Approach, 1st ed (McGraw Hill)
Class
Nutrition is a science-based class. Although there is no science prerequisite for the course, you will be required to learn some basic, scientific principles as part of your learning. You will learn about how the foods we eat affect our bodies, exploring the nutrients individually and in the context of overall diet. All classes will have assigned an adaptive learning tool (homework) for each chapter (Learn Smart) which "encourages" (requires) reading of the book. Online learners will complete weekly quizzes, discussions and 2 projects/assignments (one being a nutrient analysis). Face-to-face learners will have 2 written exams, 5 pop quizzes, in class activities and 2 assignments (one being a nutrient analysis). Online learners will do most of their learning through the reading of the book and viewing of video lectures on the discussion board. Face-to-face students will do most of their learning via the reading of the book and attending lecture. Overwhelmingly, students review my class as challenging yet very interesting and with a lot of support and enthusiasm from the instructor. In other words, you will work hard but I will provide you with the tools needed and help you (if you ask), as much as possible. And, you will learn information that you can apply to your life.

Fall 2017
Welcome Back!
I hope you all have enjoyed a wonderful break and are ready to learn with minds open and questions forming. Most of the information that you need to know about your class will be made available to you the first day of school and is also available on the syllabus (posted in our classroom in Canvas, our colleges Learning Management System). This blog will provide you with some key information for getting started (and also lists office hours, textbook, etc in the sidebar).
This semester, I will be teaching 2 face-to-face classes and 1 online class at Cabrillo and 1 online class at West Valley. Please, when you communicate with me, let me know which college and which class you are in (you can tell me the start time or the section number).
Cabrillo Students:
Cabrillo online students there is an online orientation that I will make available to your prior to the start of our class. By Saturday of the first week of school I will confirm attendance and drop all no-shows, to make room for waitlisted students and those attempting to crash. The online class is full with a waitlist so you will need to complete the first discussion post by the assigned due date. Waitlisted students should email me for a code.
Cabrillo cace-to-face students will get started Tuesday morning, at either 11:10 or 12:40. Missing the first day results in your being dropped from class and your spot given to another student. Please email me if you are unable to attend but plan to participate. Both classes have a waitlist. Waitlisted students need to attend to request an add code.
West Valley Students:
West Valley online students: I will provide you with orientation material virtually as our class begins. West Valley also uses the Canvas LMS and I will contact you via Canvas.

At this time, I confirm attendance and drop all no-shows, to make room for waitlisted students and those attempting to crash. The online class is full with a full waitlist so if you are unable to attend the orientation, reach out to me by email before our orientation. Waitlisted students should still attend as codes will go to those who are showing an intent to participate by attending orientation. (Email me if you have a conflict.)

Last year, I switched to a more interactive book, available at a price that is less than my previous book. If you are interested in owning JUST the electronic version ($85), I will provide that code to you in email 1 week prior to class, on Canvas (Cabrillo) or Angel (West Valley) and on the syllabus. You will learn about how the foods we eat affect our bodies, exploring the nutrients individually and in the context of overall diet. I hope you all have enjoyed a short break and are ready for (full-speed learning for winter session) with your minds open and questions forming. Most of the information that you need to know about your class will be made available to you the first day of school and is also available on the syllabus (posted in our classroom in Blackboard for Cabrillo, Angel for West Valley). This blog will provide you with some key information for getting started (and also lists office hours, textbook, etc in the sidebar).
This semester, I will be teaching 2 face-to-face classes and 1 online class at Cabrillo and 2 face-to-face classes and 1 online at West Valley. In addition, I am teaching 2 winter sessions for West Valley. SPRING STUDENTS
West Valley Students
West Valley online students do NOT have an on-campus orientation. I will provide you with orientation material virtually. I think you will find it quite helpful. In the spring, I am also available on Monday mornings, on campus between 10:30 and 10:50. During winter session, I do work remotely.
West Valley face-to-face students will get started Monday morning at either 11 or 12:30. Missing the first day results in your being dropped from class and your spot given to another student. Please email me if you are unable to attend but plan to participate.
Cabrillo Students
Cabrillo online students have a "mandatory" orientation on Monday, 1/25 in room 401 at 7 pm. At this time, I confirm attendance and drop all no-shows, to make room for waitlisted students and those attempting to crash. The online class is full with a full waitlist so if you are unable to attend the orientation, reach out to me before our orientation. Waitlisted students should still attend as codes will go to those who are showing an intent to participate by attending orientation. (Email me if you have a conflict.)
Cabrillo cace-to-face students will get started Tuesday morning, at either 11 or 12:30. Missing the first day results in your being dropped from class and your spot given to another student. Please email me if you are unable to attend but plan to participate.

Course eBook: This course uses an ebook that requires registering into a Connect Plus account that you create. The fee for this is $85 (and if you want a paper copy of the book, you can add that after your initial enrollment for $15). All students will need this in order to complete the adaptive learning assignments (Learn Smart) and quizzes. There is a link that is individual to EACH course, so please select the one that corresponds to the class for which you are registered. I will also send these out via email the week before class starts. To delay paying, you can use a 2 week free trial but you will have to pay to complete the class. If you are in anyway not sure if you are going to be successful in this intensive, 4-week course, perhaps try the trial as there are no refunds. There is not hard copy of the book available at the bookstore since you do need to purchase the Connect Plus access. The book title is Perspectives in Nutrition: A Functional Approach, 1st ed by Byrd-Bredbenner.

Summer 2015
This summer, I will be teaching 3 sections of Nutrition. All 3 sections will be online and completed in 4 weeks. The following is what is offered:
West Valley: 4 week course, starts 6/15
Cabrillo: 4 week course, starts 6/15
Cabrillo: 4 week course, starts 6/22
The first 2 classes are full with wait lists, but the third section (as of 5/9) is only half way full.
Here's what to expect. Please note, this nutrition class covers 16 weeks of material in 4 weeks. The amount of time needed by each student will be the equivalent of what you normally need for an online class times 4. In other words, if you typically spend 5 hours per week in an online class during a full semester, you should anticipate that you will spend 20 hours/week in our class. I am posting an estimate of what I expect at the end of this post, but it varies greatly by student.
The textbook will not be purchased in the bookstore. You will purchase a Connect (McGraw Hill) access code which gives you the ebook, the LearnSmart assignments and the diet analysis software that we will use. This summer, I will be teaching 3 sections of Nutrition. All 3 sections will be online and completed in 4 weeks. The following is what is offered:
West Valley: 4 week course, starts 6/15
Cabrillo: 4 week course, starts 6/15
Cabrillo: 4 week course, starts 6/22
The first 2 classes are full with wait lists, but the third section (as of 5/9) is only half way full.
Here's what to expect. Please note, this nutrition class covers 16 weeks of material in 4 weeks. The amount of time needed by each student will be the equivalent of what you normally need for an online class times 4. In other words, if you typically spend 5 hours per week in an online class during a full semester, you should anticipate that you will spend 20 hours/week in our class. I am posting an estimate of what I expect at the end of this post, but it varies greatly by student.
The textbook will not be purchased in the bookstore. You will purchase a Connect (McGraw Hill) access code which gives you the ebook, the LearnSmart assignments and the diet analysis software that we will use. This is what to expect each week:
2 hours to read a chapter and 1 hour to do the associated LearnSmart.. 3 hours/chapter x 4 chapters = 12 hours
1 1/2 hour on the longest discussion lectures (but you don't have to pick those) and a follow-up = 2 hours (that is a max)
Quiz: 30 minutes each x 4 quizzes: 2 hours
Assignments: entering data, answering questions, finding research: 2-3 hours (this is going to vary)
That might be more realistic, although some weeks we will have 5 chapters, so that adds 3 1/2 hours (reading plus the quiz). I am going to try to balance that, though, so the assignment has less demand that week.

Welcome Back!
I hope you all have enjoyed a wonderful break and are ready to learn, minds open, questions forming. Most of the information that you need to know about your class will be made available to you the first day of school and is also available on the syllabus (posted in our classroom in Blackboard). This blog will provide you with some key information for getting started (and also lists office hours, textbook, etc in the sidebar).
Online students have a "mandatory" orientation on Monday, 1/26 in room 401. At this time, I confirm attendance and drop all no-shows, to make room for waitlisted students and those attempting to crash. The online class is full with a full waitlist so if you are unable to attend the orientation, reach out to me before our orientation. Waitlisted students should still attend as codes will go to those who are showing an intent to participate by attending orientation. (Email me if you have a conflict.)
Face-to-face students will get started Tuesday morning, at either 8 or 9:30. Missing the first day results in your being dropped from class and your spot given to another student. Please email me if you are unable to attend but plan to participate.
Last Fall, I switched to a more interactive book, available at a price that is less than my previous book. If you are interested in owning JUST the electronic version ($85), I will provide that code to you in email, on Blackboard and on the syllabus. If you wish to purchase the softbound book, in edition to the e-version, you can either do that through the link that I supply or in the bookstore. The price for that varies, based on whether you purchase in the book store on via the link ($125).
For face-to-face students (F2F), in the past I have made the course reader (all of my powerpoint slides) available via Aptos Print Smith, in a book. In an effort to reduce costs, I will be posting those outlines as PDFs in our classroom in Blackboard. Having it in a bound format has often been very helpful for students, but if I can help you to save $20, I am willing to do so. For those who want a bound copy, we will make arrangements for that.

West Valley learners are already at work, registering into our Connect Plus account, reviewing the syllabus and exploring Angel.
Cabrillo online leaners, I have sent you an email with some basic information about getting started on 9/2.
ALL students will need the CONNECTPLUS url specific to YOUR class. That information can be found on your syllabus and on the ConnectPlus link I post in your classroom. If you can't find it, send me an email and I can email it to you, along with a direction sheet for getting registered.
Face-to-Face (F2F) you have probably not heard from me but we will cover all of the getting started information in our first day of class. If you are hoping to add into a F2F, it is important to attend. Students hoping to add online should attend orientation, if possible, or at least email me.
I would tell you that I am hanging onto the last few days of summer, but since returning from Iowa, where the book publisher took us for training, I have been getting classes ready, hoping to make the transition to a new textbook, with the ConnectPlus platform, smooth as blueberry pie for all of us.

Spring has Sprung and Summer is Soon
Greetings Students,
This summer, I will be teaching two online nutrition classes, one at each of the colleges at which I am employed. It is the same class for each school. Classes for summer fill up quickly as do waitlists. I will post more information the week before school starts. But, the textbook for summer will be the same (although it is changing for Fall). If you are hoping to be added, please do keep trying to get on the waitlist (if not already on it) as I do have to fill adds from the waitlist, first.

Late Start West Valley Class
Class starts on March 17th with class content and syllabus available by 6 pm on Monday night. All enrolled students will need to confirm enrollment via email (by 3/18) and participate in at least one of the first week's assignments.
If you are looking for information on the Late Start Class at Cabrillo, it starts on March 24th. Check with Eileen MacKusick for more information.

Spring Semester 2014: Welcome Back
Welcome Back to School!
Online Learners: There is still room in the West Valley online classes. Cabrillo students, they are adding a late start, online class with Eileen Mackusick.
West Valley Students:
NS15 Online (2 sections). Classes start January 27th. I will have our syllabus released by 5 pm on that Monday. Until then, you will find no course content and, during development, the link may even be missing in your class list but will be available by that 5 pm time. Course content will be available by Tuesday night, January 28th. There is no face-to-face orientation scheduled, however you must read the entire syllabus to better understand how to navigate the class. In addition, there is an online orientation, posted on youtube, see below. All enrolled students must email between 1/26 and 1/28, to confirm their spot in the class. Students who do not make contact with me during that time may be dropped from the class to make room for those wishing to add. Cabrillo Students
CAHM 20 (3 sections): All classes (online and face-to-face) begin on Tuesday, January 28th. Students enrolled in the online section must attend the mandatory orientation/first class meeting on 1/27 from 7-9 pm in room 510. Any student who cannot attend the orientation will need to email between 1/25 and 1/27 (before 5 pm) to prevent being dropped from the class and to make alternate arrangements. See Spring schedule-of-classes for more information. All online students should log into class, via Blackboard, on January 28th, after 5 pm. In addition, please make sure that your email address is up-to-date with the college as I will email all students on my class roster by January 24th. In addition to attending orientation, students must have positive participation in class within the first week to prevent being dropped from the class.
Face-to-face students (T/Th mornings) need to attend class on January 28th to confirm class participation or will be dropped from the class to allow another student to add. Class meets in room 510. The syllabus will be posted in Blackboard so you may download it from there, before class, if you would like a hard copy.

All waitlisted students MUST email by the first day of class to communicate their interest in an add code. I will not be able to release add codes until I have an idea of how many enrolled students will be dropping. Please note that I am required to add all waitlisted students prior to other adds but I need that request by the first day of school. It is highly advised that any student interested in adding the class keep trying to get on the waitlist, up until the day class starts. (Once classes begin, you can no longer register for the class without an add code.) The process is such that if a student drops from the roster, before the first day of school, the person 1st on the waitlist will be offered that spot (via email, so check email daily). Whether that person accepts the position or not, they will move off of the waitlist, making a new position open on the waitlist. Because of this, spots open up on the waitlist frequently, so it is important to keep checking. Once classes begin and the first day is complete, I can then assess if I have room for students NOT on the waitlist. If a waitlisted student does not attend class/orientation (Cabrillo) or email me (West Valley) on the first day, they no longer have priority. I will assign add codes based on availability.
Explanation: Although it does seem that an online class should have "room" for all students, every class has a capacity based on state funding. Over-enrolling in a class can cause the college to go over on its total student capacity. Since the college doesn't get reimbursed for students who are enrolled over the allowed capacity, there is then a limit on the amount of "room" available in all classes, online or face-to-face.

Winter Session 2014
Welcome Back West Valley!
Welcome to winter session. I look forward to a session of learning about nutrition with you! Classes begin on 1/3 and end 1/26. This 4-week (but really 3 week) course is INTENSIVE and covers all of the information and assignments found in a regular semester, with a little modification. Plan that each week of class is equal to 4+ weeks of a full-term class. On average, students report spending 10-30 hours per week on this class. The number one reason for dropping the course is the taking of more than one class while trying to work. Students consistently enjoy the material offered in the class and the organization of our classroom so, with the right study skills, I anticipate a fast 3 weeks of success and learning.
Our online classroom is now open and the syllabus and first discussion post are available, as is the Intro Quiz. All other items (for week 1) will become available the evening of January 2nd. West Valley students enrolled in the class will need to post an introduction post on the discussion board by 11:55 pm, January 2nd or you may be dropped from the course to make room for a waitlisted student. Once all enrolled students confirm their spot (which is done by January 2nd), I will drop any "no-participation" and begin adding from the waitlist first. It is important, if you are wanting to be added, whether on the waitlist or not, that you email me the week before classes begin to request an add code. Those will be released, as available on 1/3 and 1/4. I also encourage students interested in adding to check the schedule daily as between now and then, enrolled students will drop which will move waitlisted students up into the class and make more room available on the waitlist. In addition to encouraging you to clear your calendar to make time to study in the next 4 weeks, I highly recommend that you obtain the book this week. Delays in obtaining the book will prevent your success in this class. We are using the 13th edition. I have had several past students say that they used the 12th edition and felt that it provided them with most (although not all) of the required information (and I have seen students miss a few points, over the course of the entire semester, based on having the earlier version). The link I provide in my sidebar does provide the loose leaf book for a lower price (the lowest you will find when combined with the Diet Analysis Plus application) but shipping should be expedited as there is sometimes a delay in the processing of the order. If you order from Cengage, definitely select the option to add the free 14 day ebook.
